/ All Star Lanes

At the start of February, I was once again invited back to shoot for the Bowling come Karaoke come Diner come all round party venue that is All Star Lanes.

I shot some of their most handsome dishes, sharers, milkshakes and cocktails for their new website (coming soon) and social media channels. Along with Exec Chef Ashley Clarke we aimed to create some tantalising visuals of heart stopping gluttonous feasts.

/ Russell Norman / Irish Stew

In this months Esquire, Russell Norman makes classic winter warmer Irish Stew. Lamb neck is the key ingredient here as it is fatty enough to provide the stock with lots of flavour. Russell also speaks of the importance of using two types of potatoes, one waxy like a charlotte (new) potato and one floury like a Maris Piper. The waxy hold their shape while the floury break down to thicken the stock.

Subscribing to their 80/20 rule of being good eighty percent of the time allowing for treats twenty percent, these recipes help make that eighty percent more exciting. There's some lovely berry & vodka fizz, a pomegranate and clementine trifle and a delicious curry, a boxing day favourite.
